Easy to make with a egg yoke center covered in lump caviar

(not expensive compared to the real "stuff") form the ball on a pretty platter, cover with bulk caviar and then stick endive leaves all around! Best to have with drinks, 8 people so that when it is finished it is taken away. Not great for a buffet.
